Scrambled Tofu and Toast


Hi all,
Well thanks to my boyfriend I am trying to increase my protein intake on mornings. What we have here is scrambled tofu and toast

1 cup of firm tofu crumbled
1/2 tsp amino acids
pinch of black pepper and paprika
1 small onion chopped
1/2 small tomato chopped
1 tsp. finely chopped sweet pepper
1 tsp fresh parsley chopped

Method
Cook vegetables in a non stick pan for a few mins
Add amino acids and spices
Cook for an additional 4 mins
Serve with toast

I really enjoyed this meal this morning with a fresh fruit salad and green tea
It is very easy to make and those who missed eggs from their diet ( not me) will like this one.
